DID YOU KNOW? Æbleskivers translates to “apple slices,” and that hints at their most historical filling. Today, apples are not a requisite ingredient for these puffy pancakes—indeed, æbleskivers can be served plain with jam (give lingonberry a try) and confectioners’ sugar, or they can be filled with just about anything you want, from various fruit compotes or preserves to chocolate. Some people even serve them with savory filling.
Marzipan, marshmallows, and chocolate? How can things get any better? I first tasted a flødeboller— a chocolate-draped marshmallow with a marzipan or biscuit base—at a cooking demonstration led by Icelandic chef Gunnar Karl Gíslason when he came to the Nordic Culinary Conference hosted by the Nordic Museum in Seattle. I remember him including a bit of mushroom for flavor, which created the most lovely complexity to this Danish specialty. Mine doesn’t contain any fungi, but I’d like to think the blueberries and spices add a nice touch.
